A personal favourite, Mike Crook reveres the Mandarin for its unusual citric-sweet twist to Pŭtōnghuà gin, also adding nutty, woody and floral aromas. This combines perfectly with the sweet, liquorice and peppery nature of star anise.

Locally sourced Mandarins add a less sour, sweeter citric twist to the Pŭtōnghuà gin. Star Anise adds a liquorice and peppery angle to this unique gin flavour.
Step 1: Serve a measure of Pǔtōnghuà gin
Step 2: Place a slice of mandarin in the gin a minute or two
# Optional: Add a single star anise
Step 3: Add ice
Step 4: Gently pour the tonic into the glass
To accompany Pǔtōnghuà, Dick Boot suggests a stir-fried side dish of baby corn and green beans with olive oil, garlic, chilli and soya sauce. Lastly, a trickle of honey and some fennels seeds to add a mixture of sweetness and liquorice.
Drink plenty of gin and tonic, nibble and try saying Pǔtōnghuà an hour later.
